  • 1/2 teaspoon of salt (optional)

For the Egg Sauce:

  • 3-4 eggs
  • 2 medium-sized tomatoes (diced)
  • 1 medium-sized onion (diced)
  • 1-2 fresh peppers (diced, adjust to spice preference)
  • 2 tablespoons of vegetable or palm oil
  • 1/2 teaspoon of salt (adjust to taste)
  • 1/4 teaspoon of seasoning powder or cube (optional)
  • Chopped vegetables (optional, like bell peppers or spinach)

Equipment Needed

  • A large pot for boiling yam
  • A frying pan for the egg sauce
  • A sharp knife
  • A chopping board

Instructions

Step 1: Prepare the Yam

  1. Peel and Cut: Peel the yam, then cut it into thick slices or cubes, depending on your preference.
  2. Rinse and Boil: Rinse the yam slices thoroughly and place them in a pot. Add enough water to cover the yam and a pinch of salt (optional).
  3. Cook: Boil over medium heat for about 15-20 minutes, or until the yam is soft. You can test by piercing with a fork; it should go through easily.
  4. Drain: Once cooked, drain the water and set the yam aside.

Step 2: Prepare the Egg Sauce

  1. Whisk the Eggs: Break the eggs into a bowl, add a pinch of salt, and whisk until smooth.
  2. Heat the Oil: In a frying pan, heat the vegetable or palm oil over medium heat.
  3. Sauté the Onions: Add the diced onions and sauté until fragrant.
  4. Add Tomatoes and Peppers: Stir in the diced tomatoes and fresh peppers. Cook for about 5-7 minutes, stirring occasionally, until the mixture thickens and the oil begins to separate.
  5. Season the Sauce: Add salt and seasoning cube/powder (if using). Stir well.
  6. Add the Eggs: Pour the whisked eggs into the pan. Allow it to set slightly before stirring to create a scrambled texture.
  7. Optional Add-ins: Stir in chopped vegetables like spinach or bell peppers for extra flavor and color.
  8. Cook Through: Allow the mixture to cook for another 2-3 minutes, then remove from heat.

Serving

Serve the boiled yam with a generous scoop of egg sauce on the side. You can also pair this meal with a hot beverage like tea or coffee.

Tips for Success

  1. Choose Fresh Ingredients: Fresh tomatoes and peppers enhance the flavor of the egg sauce.
  2. Control the Spice: Adjust the amount of fresh pepper to suit your spice tolerance.
  3. Experiment with Add-ins: Add proteins like fried fish or corned beef to the sauce for a heartier meal.
